Wood sorrel, Oxalis acetosella
Edible Parts:
· Leaves
· Flowers
Uses:
The leaves are great in salads and fish. They have a sharp lemony flavour due to the low quantities of oxalic acid.
When and where to find it:
Best fresh in the spring. Usually grows between March and June. Mostly found in shaded woodland.
Other Observations:
It’s a small, low lying plant with white flowers. Don’t confuse it with procumbent yellow sorrel. Yellow sorrel is not found in woodlands and it has yellow flowers hence the name.
