Uses:
Young leaves taste great in salads. They can also be used in jellies or sauces. Steep the leaves in freshly boiled water to make tea. (don’t add leaves to teas while it’s still boiling, it breaks down the vitamins)
When and where to find it:
Grows between April and October. Usually found in marshes, meadows, damp woodland and by rivers and streams.
Other Observations:
Be careful not to include other leaves when harvesting. Hemlock grows in similar places, also beware of liver fluke if picking from streams with livestock nearby. Boiling the leaves in this instance kills it.
