Uses:

The leaves can be used in salads or cooked. You can use the flowers for dandelion wine or jelly and the roots can be roasted as a winter vegetable or dried to make a coffee.

When and where to find it: 

Young leaves can be found in Spring and throughout the year. The roots are best eaten as a vegetable during the winter months between September – March. Usually found in grassy areas, gardens and fields.

Other Observations: 

The leaves are unevenly toothed, growing in a rosette shape. They are solitary plants with a bright yellow flower on a leafless stem.
